My rustic Cherry Tart Recipe
If you like a super easy, quick to make rustic cherry tart you will love my recipe. It's one of my own creations and was born from my love for slightly tart tasting fruit tarts. The ingredients will surprise you and the taste wow you. Here is goes....
Rustic Cherry Tart
Pastry Dough Ingredients

1 1/4 cup Honey Maid Graham Cracker Crumbs
1/4 cup honey (I try to avoid refined sugar, but you can also use 1/4 cup sugar)
5 tablespoons melted butter
1/4 teaspoon salt
1-2 tablespoons ice cold water
Cherry Filling Ingredients
1 jar sour cherries, halved and pitted
2 tablespoons apple-orange-cranberry relish ( I buy mine from William Sonoma here , but you can use any orange-cranberry relish you can find)
2 tablespoons Lingonberries
Directions
For the Pastry Dough: Combine Graham crackers, sugar and butter in a medium bowl. Using your fingers, quickly incorporate the butter, working it into the cracker mixture, until the butter is roughly the size of peas. Add water 1 tablespoon at a time, tossing together with a fork, until the dough sticks together to form a ball. (The amount of water needed will depend on the humidity. Use as much as you need, just avoid letting it get too sticky!) Spread the dough into a well greased out baking pan and press the sides slightly up.
Consistency of filling mix
For the filling: Mix together the filling ingredients until cherries are evenly coated. Pour onto the centre of the tart and spread out to within 2 inches of the edge. Remove any excess liquid by pressing down a spoon. You don't want the mix to make the crust soggy.
Bake at 350ºF for 10 minutes, or until filling is bubbly and crust is golden brown. Allow to cool before slicing and serving. You can sprinkle some confectioners sugar over the pie to make it look more festive. I also highly recommend having some whip cream or vanilla ice cream on the side - it's not necessary, but OMG the combo is to die for!
Store in an airtight container in the refrigerator, but let it come up to room temperature before serving.
