Coleslaw Salad

When I am really busy with working on paintings, I tend to fret over having to invite large groups of people. Nowadays with everyone having dietary restrictions, what to cook can become rather limited as well. So here is a recipe that is for the health conscious, great for vegans and just overall yummy!
Recently one of my good friends opened my eyes that one does not have to serve hot foods at every party. Combining finger food with great tasting salads like this Coleslaw, adds variety and is very filling. Ingredients
1 bag of precut white cabbage -
available at the produce section in most local grocery stores
1/2 bag shredded carrots
also available at the produce section in most local grocery stores
1 cup of currants
150 gr chopped walnuts
2 freshly squeezed lemons
3 TBSP Olive oil
2 TBSP mayonnaise
1 TBSP Dijon mustard
salt an pepper to taste
Directions:
1. Combine cabbage, carrots, currents and walnuts and mix thoroughly in a bowl.
2. Add Lemon juice, mayonnaise, mustard and season and you are done!
