Some dishes are heavy and rather than serving a regular salad, I prefer something refreshing like a cucumber salad.
2 medium size cucumber
1 half red onion finely chopped
1 tsp fresh chives cut
1 small garlic clove chopped very fine
2 tbsp olive oil
2 tbsp rice vinegar
salt and pepper to taste
1 tsp cilantro or parsley finely chopped
1. Slice the cucumber into very thin slices.
2. In a bowl add onions, garlic, oil, vinegar, cilantro and salt and pepper and mix together. If you have time let the ingredients infuse the dressing for about 5 min.
3. Pour dressing over cucumbers and sprinkle with chives
