When looking for what to eat for breakfast that is both filling and nutritious I always like to use ingredients that I know will boost my energy for the day. This gluten-free matcha green tea pancake recipe was made using Kiss Me Organics Matcha Green Tea Powder.
I am a big fan of Kiss ME Organic Matcha Green Tea and just love using the powder in shakes, but this time around I wanted to see if I can incorporate the powder in a breakfast dish for a morning energy boost and decided to make pancakes with it.

Eating Healthy Matcha Green Tea Pancakes
GLUTEN FREE PANCAKES USING MATCHA GREEN TEA
Yields 7-8 pancakes
Total Time: 15 minutes
INGREDIENTS
1 1/2 Cup Milk
2 cups brown rice flour
2 eggs
1 1/2 tsp baking powder
1 TBSP organic sugar
2 TBSP Matcha Green Tea Powder
4 TBSP butter or more as needed
TOPPING
1 cup Greek yogurt
1/4 cup of trail mix ( any assortment of nuts and dry fruit will work)
Maple Syrup as needed
DIRECTIONS
1. Mix all dry ingredients in a medium-sized bowl, add eggs, milk, and sugar. Using a wire whisk, mix the batter until all ingredients have been mixed
2. Melt butter on medium heat in a non-stick skillet. Ladle (about one cup) of the mix into the melted butter and let pancakes brown on both sides (about 2-3 minutes per side).
3. Place each pancake on a plate and top with 1 TBSP of Greek Yogurt and some trail mix. You will be surprised to learn how well the yogurt goes with these pancakes. It makes for a much healthier whip cream substitute.
4. Pour syrup to your liking.
Note: Cooked pancakes can be kept in the freezer for up to two months.
