Blue Cheese Dressing

Maytag Blue Cheese

If you like Cheesecake Factories Blue cheese dressing you might like this one as well.

2 shallots, very finely minced
2 tbsp vegetable oil
2 oz crumbled blue cheese
1½ cups buttermilk
½ tsp salt
12 cups gourmet salad mix / mixed baby greens (mesclun)

Combine all ingredients except greens and whisk until smooth or blend at low speed.

Chill.

When ready to serve, put 2 cups greens on each salad dish and top with dressing.
