 BBQ time

Summer is the best time for BBQ and having great sauces on hand can add variety to your dishes. BBQ'd chicken with Steak sauce takes on a completely new character.

You can use this recipe on chicken thighs or use an entire chicken using the beer can technique as I did.

 BBQ TIME

What you will need:

1 (12 oz) beer can

1 (3.5 lb ) chicken

2 Tbsp Primal Kitchen Steak sauce ( it's thin like Worcestershire sauce, not thick like A1 sauce)

2 tsp olive oil

1/2 tsp paprika

1/4 cup coarse salt

2 cups wood chips (preferably hickory - soaked 1 hour in water , then drained)

Chicken Rub

Directions:

  1. Pour half the beer over the soaking wood chips
  2. Poke a few additional holes into the top of the can
  3. Turn on the grill to get it hot
  4. Remove the giblets from the body cavity of the chicken, rinse and tab the chicken dry with a paper towel
  5.  Rub chicken inside and out with paprika, salt pepper, Primal Kitchen Steak sauce and a bit of olive oil
  6. Hold the chicken upright and slide it over the beer can. Pull the chicken legs forward to act as a counter balance and to keep the chicken from falling over.
  7. Tuck the chicken wings behind the back
  8. Brush all over with the Primal Kitchen Steak sauce
  9. If you are using a charcoal grill drain the water from the wood chips and sprinkle them over the coals. If using a gas grill place them on some Aluminum foil and just add it somewhere on the hot grate
  10. Stand the chicken up in the center of the hot grate
  11. Cover the grill and cook chicken until the skin turns a dark golden brown and is very crispy. The meat should be cooked through  about 180 degrees for 1 1/4 to 1 1/2 hours.
  12. Use long tongs to remove the chicken from the grill and transfer it to a plate.
  13. Serve with extra Primal Kitchen Steak Sauce for dipping.

The Steak sauce is made with 100% pure Avocado Oil and is sugar free. For me the latter is extremely important since so many sauces also have a great amount of sugar or artificial sweeteners in them. Since I was used to thick BBQ sauces I was surprised to see that this sauce was runnier than most. However to coat the chicken a couple extra applications of brushing on the sauce worked well. The sauce adds a nice smokey robust flavor the chicken and tasted really good. Primal Kitchen sauces are Keto and Paleo Certified. Sauces can be found at Wholefoods.
