Thai Beef Stew Variations

I found this easy to follow Thai Beef Stew in Red Curry sauce on Youtube. My ingredients are the same except were noted. Since I love eggplants and mushrooms, I have substituted those by simply adding them instead of the potatoes.



Ingredients:
2.5 lbs boneless beef chuck roast 2inch cubes
1 bay Leaf
Thai Basil (substitute cilantro)
1 tsp Thai Red Curry
2 tbsp tomatoe paste
1 pint beef stock
1 can regular coconut milk
3 cloves of garlic,
1 onion
3 inch ginger onion
1/4 cup fish sauce (I left it out)
1/4 cup brown sugar
1/2 cup dry roasted peanuts (I left this out)
salt, pepper
1tbp coriander
1tbsp cumin
Golden Yukon potatoes - I used 8 small eggplants and mushrooms instead
