As an artist I am always surrounded by color, but there are times when simplicity is also very attractive. When dishes are a solid color and lacking any sort of patterns, it allows the food to be the star.
Here I had prepared a couple of dishes and I really wanted to emphasize the amount of time I had spend covering the roast in the herbal coating. In a colored dish, it would never have made such a statement.
