1 half Papaya, diced
1 large Tomato diced
1 half red bell pepper diced
1 half onion diced
1/2 cup cilantro diced
1 TBSP Olive oil
1 lime squeezed
1 pinch salt
1 pinch pepper
Combine all the ingredients in a bowl, mix and serve.
Hint: I love to buy a bag of frozen papaya at Trader Joe's. This way the salsa can be quickly prepared whenever you need a dash of color and a nice fresh side for whatever you make.
