Chicken Tagine

Cooking in a tagine is a Morrocan way of slowly cooking ingredients so that the flavors can blend over time. As the ingredients start to simmer the flavors of the spices release and create a wonderful rich tasting broth.

Chicken tangine

For the Chicken Tagine (serves 2-3)

In a pan combine the ingredients below and sautee the onions until golden brown.

2 Large onions, sliced

3 garlic cloves chopped finely

1 tsp cumin

1 tsp turmeric 

1/8 tsp (pinch) of saffron (optional)

1 tsp Paprika

1 tsp salt

1/2 tsp black pepper

1/4 chopped cilantro

2 chicken breast

After about 5 min when the onions and the chicken is  slightly browned add:

5 carrots

1 cup of mushrooms sliced

2 bay leaves

1/2 cup chicken broth.

Cover with the Tagine top and place in oven for 45 min at 350 F

Serve with rice or bread.
