Potato Gratin

Last night I ate a wonderful potato gratin and it made me wonder why I do not make this simple dish more often. It is easy to prepare and such a nice comfort food. Served straight out of the oven it is a great companion to any meat or poultry dish.

For Recipe:

Ingredients:

Serves 4

4 - 5 medium potatoes, peeled and sliced thinly

3-4 medium onions, peeled and sliced thinly

2 Tbsp. butter

4 cloves of garlic, minced and pressed

1tsp. salt

dash of pepper

dash of nutmeg

dash of paprika

1tsp. dried thyme, if you can get fresh one use that instead for an even better falvor

3 Tbsp. chopped parsley

1/2 cup heavy cream

1 egg

Optional: 1 cup shredded Gouda Cheese

Directions:

Baking time about 50-60 minutes

1. Saute onions and garlic in butter in a a large skillet until soft and transparent.

2. In a shallow baking dish, arrange the onions and potatoes in layers and sprinkle with seasoning

3. Bake at 350F for about 40 min

4. Add egg to whipping cream and quickly whisk (the egg makes the gratin a bit thicker - optional)

5. Pour mix over potatoes and sprinkle with more paprika

6. Optional: You can sprinkle the Gouda cheese over the top at this point

7. Return to oven and increase temperature to 400F and bake for another 10 to 20 minutes until potatoes are soft and slightly browned on top
