Easy Healthy Homemade Chocolate
Christmas is my most favorite time of the year and it's the time when I just love baking and making special treats. This time I made mouth watering, great tasting chocolate without preservatives and wax. For an added treat I used my latest find of these super cute candy/cake molds by Status Kitchen to make some healthy homemade chocolate bites that look rather festive.
All you need is three ingredients
1/2 cup Coconut Oil (melted)

3 TBSP Maple or Agave Syrup or honey
1/2 cup 70% Cacao Powder
1/2 tsp vanilla extract (optional)
Try adding some crushed nuts or berries - the possibilities are endless!
Directions
The coconut oil has to be in liquid form, so if yours is solid warm it up a bit. Pour it into a glass bowl and add the cacao powder. Use a flour sifter to make sure that there are no clumps.

Add your sweetener and vanilla extract and mix everything together. Pour the chocolate into molds. I used the ones by Status Kitchen and placed my chocolates into the freezer for one hour.
The first time I tried making the chocolates I was so proud of how cute they all looked that I put them into a dish and placed them on the table. Bad idea, when I came to take one later that day, I found a heaping mess of melted chocolate. Needless to say all I had to do is mix it all up again, re-pour, refreeze and this time keep the chocolates in the fridge.
