Best tasting Paleo Chocolate Chip Cookie!
Over the weekend I had such an insane craving for chocolate chip cookies. Problem is that with regular cookies my sugar so I have to stay away from them. However, my daughter had given me a cookbook by Danielle Walker "Against all Grain" and I decided to try the flour-less recipes listed there. OMG these cookies were wonderful! Gooey, chewy, chocolate goodness rapped in crumbs~
The recipe is called real-deal chocolate-chip cookies
prep time: 12 min cooking time: 10 min yield: 1 dozen stay on plate time: 0
1/4 cup palm shortening
1 egg at room temperature
1/4 cup coconut crystals
2 TBSP honey
2 tsp pure vanilla extract
11/2 cups blanched almond flour
2 TBSP coconut flour
1/2 tsp baking soda
1/2 tsp sea salt
1/4 cup dark-chocolate pieces
1/4 cup dairy-free chocolate chips
1. Preheat oven to 350 F
2. Place shortening and egg in a food processor and process for 15 seconds
3. Add coconut crystals, honey and vanilla extract. Process until its all mixed up
4. Add the flour, baking soda and salt and mix for another 30 seconds
5. Stir in chocolate by hand
6. Use a large tablespoon to scoop out the balls of dough and place them on a baking sheet on parchment paper. Lightly press dough down to get 1/2 inch thick cookies
7. Bake for 10 minutes, until the cookies are browned around the edges. Cool on a wire rack
Heaven on a Plate
What a treat those were! Since anything that converts into sugar can give me monster headaches I proceeded eating half a cookie with caution, but they were so good that I risked it, lived dangerously and ate the whole cookie. Happy to report that these Paleo chocolate chip cookies did not spike my sugar and that the headaches stayed away.
