Since I have tried to eat healthier finding desserts that are finger licking good has been a bit of a challenge. However, I hit the jackpot with a light as a cloud, fluffy pudding made with Chia seeds. Yup, those same seeds used to make the Chia Pets!
Chia seeds have been a staple in the Aztec diet for centuries because they are not only easy to grow and harvest but packed full of nutrients like Omega 3 and Fiber, are filling and act as an energy booster. I will let you watch this super informative video to learn more about all the health benefits Chia seeds have.
Ingredients
1 cup Milk
2 TBSP Chia Seeds
1tsp Stevia
1tsp Vanilla Extract
1 hand full fresh or frozen raspberries
Optional Whip cream for topping
Directions
I found that a small jar with a lid works best to make the pudding since Chia seeds require frequent stirring until they become gelatinous.
1. Pour the milk into the jar
2. Add Chia Seeds, stevia, vanilla and stir vigorously. Place in fridge for 24 hrs or until mixture thickens.
3. Pour gelatinous mix in a blender and add raspberries. Blend on high for a few minutes until the mix becomes fluffy (almost like whip cream)
4. Divide the mixture into serving dishes and top with additional berries and whip cream.
