I love hot chocolate and have been trying different recipes to find a rich coco flavored one. I found this great recipe from the French Cooking Academy with video that I tried and fell in love with.
Ingredients:
- 1/2 Liter full cream
- 100 grams dark chocolate (70% cacao) - I like Ghirardelli
- 1 or 2 cinnamon bark sticks
- 1 pinch of sugar
- a few drops of vanilla essence
- 1 TBSP pure cocoa powder
- 1 pinch of salt
Directions
- Heat up milk on medium to high heat
- Add cinnamon bark
- Add vanilla extract
- Wait until milk boils, reduce and let simmer
- Now put heat on low and let simmer for 10 min
- Cinnamon will diffuse the milk flavor
- turn heat off and discard cinnamon bark
- add 1 TBSP pf cocoa powder and stir
- filter milk through seven and return to pan again
- add a pinch of sugar and a pinch of salt
- now add the chocolate pieces and stir gently until the mix is silky
- if you leave the heat on low the cocoa will get thicker and thicker
